Hello, keto food enthusiasts! Today, I am super excited to introduce a new recipe from Dr.Jockers. This fantastic recipe is for a keto cauliflower bread that is not only low-carb but also has healthy fats, fiber, and immune-boosting herbs.

This recipe is based on his wife, Angel’s, recommendations. Now, let’s see what ingredients we need:

  • 3 cups cauliflower, riced and steamed
  • 10 large eggs
  • ¼ tsp cream of tartar
  • 1¼ cups coconut flour
  • 1½ tbsp. aluminum-free baking powder
  • 1 tsp pink salt
  • 6 tbsp. butter
  • 6 cloves garlic, crushed
  • 1 tbsp. fresh or dried rosemary
  • 1 tbsp. fresh or dried parsley, finely chopped

The next step is to prepare this fantastic dish, following these instructions:

  1. Preheat your oven to 350F and line a 9″ x 5″ loaf pan with parchment paper.
  2. Separate egg whites from yolks and beat the egg whites with cream of tartar until stiff peaks form.
  3. Combine coconut flour, salt, egg yolks, baking powder, melted butter, crushed garlic, and ¼ of the whipped egg whites in a food processor. Blend until smooth.
  4. Squeeze excess water from steamed cauliflower using a kitchen towel. Add cauliflower to the food processor and blend until well combined.
  5. Add remaining egg whites, rosemary, and parsley. Pulse a few times to combine.
  6. Transfer the batter to the lined baking pan and bake for 40–45 minutes until golden. Let it cool completely before cutting.

Words From Dr. Jockers

“Rosemary is rich in polyphenol rosemarinic acid, which helps give it its unique scent and supports the immune system and mental and emotional health.  Garlic is rich in sulfur compounds such as allicin that act as natural anti-microbials and strengthen the immune system. Coconut flour is a whole of prebiotic fiber that supports a healthy microbiome, and the eggs provide fat-soluble vitamins, protein, and healthy fats.”
