Butternut Squash Detox Soup

‘Twas the season to eat a little bit more than we’d like and that’s ok! It is important to enjoy yourself but be mindful. This Butternut Squash Detox Soup has all the right ingredients to help detox that belly and reset!

Ingredients:
1/2 cup low-sodium vegetable broth
1/2 white onion, chopped
2 cloves garlic, minced
2 medium carrots, chopped
1 tbsp fresh ginger, chopped
2 cups butternut squash, peeled and chopped
1 tsp pink Himalayan salt
1/2 tsp turmeric
1 tsp thyme
1/4 tsp cinnamon
1/4 tsp black pepper
Dash of fresh-squeezed lemon

Directions:
In a medium pot, heat the veggie broth over medium-high heat. Sauté the onion and garlic for 2-3 minutes. Add the carrots and ginger. Cook for about 5 minutes. Add the butternut squash, salt, turmeric, thyme, cinnamon, and pepper. Mix well and cook another 5 minutes. Turn off heat and stir in the fresh lemon juice. Using a blender, pureé the soup until smooth and creamy. Garnish with thyme and serve immediately!
